  • Coconut Havana 3 Year Old 60 ml
  • Pineapple Cordial 15 ml

Instructions to make Coconut Havana 3 Year Old
Melt 250g of Coconut fat, add 2 bottles of Havana 3 year old and leave to infuse for an hour. Place in freezer until fat re solidifies. Strain off the large solids then strain through a coffee filter.

Instructions to make Pineapple Cordial
1kg cubed Pineapple
1kg sugar
1 litre water
10g malic Acid
10g citric acid

Method:
Add all ingredients to a vac pac bag, and water bath at 60 degrees C for 1.5 hours. Strain gently through super bag, to get clear cordial.
Keep pineapple cubes and blend them to get pineapple puree.

Preparation:  Stir ingredients together and double strain into small cocktail glass.

Glassware: Cocktail Glass

Garnish: Lime zest
